I know, I know, something relatively healthy on my Weekend Nosh post – perish the thought! So, if you live in the USA how was your America! Fuck Yeah! Day? As far as mine went, due to the dubious legalities of known suspects in the greater Los Angeles area, I am unable to divulge any details other than “it was good”.
Back to the fish. Summer is the perfect time to start eating healthy (or healthier) since the heat can really squelch the appetite. Fish is the best way to go and poaching is so damn simple anyone can do it. For the recipe above I merely took a bottle of cheap-ass white wine, dumped it into a deep skillet, added some herbs & fresh lemon rounds, my fish and simmered it until cooked – no more than 10 minutes. Guacamole adds a really fresh, healthy summer-y alternative to sauce to make the fish not as bland. All it takes are fresh avocados, red onion, a finely diced seeded jalapeno, 1 large fresh tomato, some garlic powder and a squeeze of lime. Viola! This whole dinner took me all of 20 minutes and filled my mom and I right up without making us feel gross and heavy.
