Recipe: German Apple Pancakes

My cousin Linda made these for me when I visited her and my cousin Jim in Washington this last July. Hello, Heaven! I made them for Christmas breakfast as a compliment to my aunt’s traditional Eggs Benedict and they were a hit. You can also make this as a dessert.

German Apple Pancakes
2 pancakes

4 eggs
3/4 cup of flour
3/4 cup of milk
1/2 tsp salt
1/4 cup butter
2 med apples, thinly sliced
1/4 cup sugar
1/2 tsp cinnamon

Place 2 pie plates in oven which has been heated to 400 degrees while preparing the batter.

Beat eggs, flour, milk and salt together for 1 minute.

Remove pans from oven. Place 2 TBSP of butter in each pan and rotate pans until butter is melted and coats the sides of the pans.

In each pan, arrange half of the apple slices. Divide the batter evenly and pour over apple slices.

Mix sugar and cinnamon together and sprinkle over the batter in each pan.

Bake until puffed and golden brown 20 to 25 minutes.

This goes very well with homemade whipped cream

1 pint of heavy whipping cream
2 TBS powdered sugar
1 tsp vanilla

Using chilled beaters, beat the cream in a medium bowl
Just before the cream peaks, add sugar and vanilla and beat until it just comes to slightly stiffened peaks
