Four bananas were browning to bread making perfection, but I wanted to do something different with them – and what better accompaniment than Nutella; which I have 3 jars of in my cupboard. Using my Google-Fu, I came across this recipe on Kitchen Mirror and only modified it a smidgen. When I mentioned on Twitter that I was baking Banana Nutella Bread it was like I had said I possessed the Holy Grail – only tastier. If you’re a fan of the banana-chocolate combo, you are in for a real treat. Simple and decadent, this is the perfect dessert to whip up for potlucks, parties or just to indulge.

Banana Nutella Bread
4 very ripe bananas
1/2 cup dark brown sugar
1/2 cup sour cream
1/4 cup applesauce (unsweetened)
2 eggs
2 cups all-purpose unbleached flour
1 tsp baking powder
1/2 tsp baking soda
1/2 cup Nutella
1/2 cup finely chopped roasted, unsalted pecans
Preheat oven to 350 degrees
Grease up the inside of a loaf pan (I used Canola spray)
With your electric mixer on a medium-low speed, mix up the bananas, brown sugar, sour cream and apple sauce.
Once they are well incorporated, add the baking soda, powder, flour, eggs. Combine well on low-medium speed.
Mix pecans in manually, using a spatula or rubber scraper.
Pour half of the batter into the loaf pan, add half of the Nutella and swirl with a knife or scraper. Repeat with the other half.
Bake for roughly 60, depending on your oven. The toothpick will come out clean but the middle will more than likely still be gooey. I like it this way, so it never bothered me.
Removing the loaf from the tin was proving to be too tricky as it would start to break apart each time, so I just left it in and cut pieces as needed. The spray kept it from sticking.
This recipe is pure bliss; it’s definitely going into my regular dessert rotation.

NOTES
Sour cream can be replaced with yogurt if you like. You won’t taste either and this ensures the loaf doesn’t dry out.
Tracing back the recipe, I learned that Kara of Kitchen Mirror replaced oil with the applesauce, which I prefer and will be trying out in future recipes.
