Homemade baked garlic butter

My mother and I live for garlic; between its palate-warming flavor and health benefits, it’s positively the best component to add to any recipe. It’s incredibly versatile, but I have found that nothing tops homemade garlic spread, so smooth it’s like “butter” (but not!) – it’s easy and can be used as a compliment to another dish or eaten on its own. Credit for this simple & tasty garlic “butter” goes to my mum.

Remove any loose, dried skin from a garlic bulb or two but do not peel completely.
Make a cradle out of a sheet of aluminum foil.
Place garlic bulb(s) in foil, pour extra virgin olive oil over them until bottom of foil is covered.

Fold up the foil and twist loose ends, sealing the garlic tightly in.

Bake in toaster oven:
325 degrees = approx. 90 minutes
350 degrees = approx. 60 minutes
400 degrees = approx. 45 minutes

The garlic will be thoroughly cooked when done, easily squished out of its casing and spreadable like butter.

Our favorite snack with this garlic is on soft, thick French bread. I’ve also toasted the bread, spread on some garlic and melted some cheese for garlic cheese toast.
